Celery Juice
Celery 2 bunches (about 2 lbs)
Apple 1 large
Water As needed
Vitamix blender (or other powerful blender)
Nut milk bag
Lay celery upon a cutting board. Using a sharp knife, remove the leafy parts as well as the bottom of the stalk. Chop the celery in half or thirds. Place in large bowl of soapy water or a water/vinegar solution to wash. Rinse well.
Wash apple with soap and water. Rinse well. Slice apple in quarters. Using a sharp knife, remove the core and seed from each quarter. Add apple to blender in addition to about a cup of water.
Feed celery to the apple and water in blender until it is blended thoroughly. You may need to add more water as you go in order to keep the blender working properly.
Once it is blended thoroughly, pour mixture into a nut milk bag that is situated inside a large bowl. Squeeze bag until all liquid has been wrung out of mixture. This is a necessary step – the juice without this step is unpleasant, texturally.
Pour the strained juice into glass containers, such as quart jars, and place in fridge. The juice is good for up to a week. It can also be frozen indefinitely.
The juice should be shaken before poured and may need to be stirred while drinking, depending on how long it takes you to finish the serving. Serve over ice for the best flavor.
