Chopped Salad
Variety of Greens—Spinach, Kale, Arugula, Spring Mix, Lettuces, Sprouts or Shoots.
Variety of Fresh Herbs—Rosemary, Dill, Thyme, Oregano, Basil and more….really adds an incredible dimension to salad. Start with a small amount – a little goes along way.
Variety of Vegetables—This is a great way to get a wide variety of veggies into your body. Slice them thin and dice small. This is a terrific way to add in veggies that are not as well liked.
Variety of Dried Fruits, Nuts, Seeds—Raisins, Cranberries, Apricots, Cherries, Almond, Hazelnut, Peanut, Cashew, Hemp, Chia, Sunflower are just a few options.
Variety of Fresh Fruit—Apple, Pear, Pomegranate Seeds, Strawberry, Blueberry are just a few options.
Honey—Plain honey works well. Or add infused honey for even more tasty fun and health benefit. It is best to have a runny honey for this. See my recipe for infused honey here.
Organic Olive Oil—Look for a high quality, organic brand. In the US I really like Organic Roots out of California. They are a family-run business and unlike most other companies, their olive oil is produced solely from their farm, not combined with oils from abroad.
Vinegar—the thick glazed balsamic is wonderful on these salads, though regular balsamic or any vinegar works just as well.
The Sassy Llama Way
One or two handful of greens—mix and match at least two types together. Place on cutting board in a pile and chop finely. Add to mixing bowl.
For a Breakfast Salad—Add a spoonful or so of seeds, chopped dried fruit as well as any diced fresh fruit and finely diced veggie to your preference.
For a Dinner Salad—Add a spoonful or two of seeds and chopped nuts, as well as finely diced veggie to your preference.
Drizzle olive oil over your salad; be generous— olive oil is so so good for us! Sprinkle some really nice salt and finish with a squeeze of fresh lemon or lime juice, or drizzle vinegar over the greens. In the US I am a big fan of Jacobsen Salt, harvested from the Oregon Coast at Netart’s; be sure to buy the flakes!
Alternatively, drizzle a spoonful or two of honey over the greens.
Using two spoons, mix the greens with the dressing.
Scoop onto plate, add warmed up meat or vegan substitute, toasted bread and enjoy!
